Delicious and Easy Summer Work Lunch Ideas

Struggling to think of something for lunch this week?


NAPT's Homemade Nandos Salad


Ingredients

2-3 leaves of baby cos lettuce

2 sticks of broccolini

1/2 Avocado

1/2 Red Onion

1/2 Red Capsicum

1 Chicken breast

Extras

Olives

Nandos mild sauce


Method

  1. Wash all your vegetables & cut them up however you want, once completed put to the side

  2. Grab 2 bowls & put half your marinade into one & half of the rub into the other

  3. Thinly slice your chicken breast & place into marinade coating the chicken then put it into the rub & coat your chicken

  4. In 2 pans heat a tiny bit of vegetable oil & cook your chicken & broccolini until fully cooked

  5. Once everything is cooked place assemble into containers & refrigerate
