Natalies Chicken Pesto Pasta Salad

Serves 4pp:

Ingredients:
250g wholemeal pasta
1 tablespoon of died basil
1 tablespoon of garlic salt
80g baby spinach leaves
Coles pesto in a jar
2 tsp chilli oil
500g Chicken Breast Fillets, diced
1 cup of cauliflower & broccoli
1 bunch asparagus, cut up
Cherry tomato’s, halved
1 red onion, diced
1/4 cup (25g) shaved parmesan
Method
STEP 1
Cook pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well. Proceed to add half the jar of pesto & mix well through the pasta.
STEP 2
Meanwhile, place the chicken into a pan, sprinkle basil & garlic salt over the chicken, & cook fully over high heat.
STEP 3
In another saucepan boil water & cook asparagus, broccoli & cauliflower. Once cooked place tomato’s, cucumber, spinach into a salad bowl & mix everything through.
STEP 5
Place everything into the salad bowl & mix through as much parmesan as your heart desires.
STEP 6
